RECIPE OF THE DAY: Creamy Italian Pasta Salad

The creaminess in this recipe isn’t as bad as you think. Only ½ cup of mayonnaise is added to the dressing, along with Italain dressing, mustard, and lemon juice, for a silky and flavorful dressing.

1 pound rotini pasta
1 cup Italian dressing
1/2 cup mayonnaise
6 tablespoons lemon juice
2 tablespoons mustard
2 cups chopped cucumber
1/2 cup chopped celery
1 cup sliced black olives
1 bunch green onions, sliced
2 cups chopped cooked chicken
Salt and pepper, to taste
pinch of paprika (optional)
Bring a large pot of water to a boil. Heavily salt the water and stir in the pasta. Cook 1 minute past al dente. Rinse with cold water, and set aside.

In a large bowl, combine warm pasta with all other ingredients, stir until well mixed. Serve at room temperature or chilled.
